Herb & Garlic Goat’s Cheese
with Plain Fettuccine
INGREDIENTS
375g Bellata Gold Plain Fettuccine
400g firm goat’s cheese (thickly sliced)
2 tablespoon lime rind
Fresh thyme and parsley
Butter (5 knobs)
3 medium size garlic cloves (crushed)
1 medium size red onions (finely chopped)
Few capers
2 tablespoons lime juice
1 small red chilli (chopped finely)
Salt to taste
INSTRUCTIONS
On the foil-lined grilled rack, put the goat cheese and grill until golden and keep aside. In a pan melt the butter, sauté the onions, garlic, chilli, herbs for about 2-3 minutes.
Cook the pasta in salted boiling water until al dente, drain toss in the sautéed pan, add the capers, sprinkle with more fresh herbs and serve hot.
