Bellata Gold Pappardelle
Carbonara
Ingredients:

400g Bellata Gold Pappardelle

6 rashers bacon or 300 g smoked ham or pancetta cut into thin strips

3 green onions, slice4 egg yolks

1/2 cup finely grated parmesan cheese

Sea salt and cracked black pepper

2 tablespoons chopped flat leafed parsley
Method
Cook Bellata Gold pasta as per pack. While the pasta is cooking, heat in a frying pan bacon, ham or pancetta, and the onions and cook until the bacon is crisp.
Place the egg yolks, cream, parmesan, salt and pepper in a bowl and whisk really well, make sure all ingredients are combined.
When the pasta is cooked, drain and keep hot. Toss the egg mixture through the hot pasta, coating the pasta well, then mix with the bacon mixture and garnish with parsley.
Serve immediately.
