What is Pasta ?

Under Italian law, dry pasta (pasta secca) can only be made from durum wheat flour or durum wheat semolina. Durum flour and durum semolina have a yellow tinge in color. Italian pasta is traditionally cooked al dente (Italian: "to the tooth", meaning not too soft). Outside Italy, dry pasta is frequently made from other types of flour (such as wheat flour), but this yields a softer product which cannot be cooked al dente. (Source: Wikipedia)

How Healthy is Pasta ?

Low in Fat

One cup of cooked spaghetti provides about 200 calories (830 kilojoules), less than one gram of total fat, and no cholesterol.

Low in Sodium

Due to the rich black soils and unique climatic conditions in which Bellata Gold's durum wheat is grown it is also extremely low in Sodium (Salt). Pasta as a whole is low in salt, however pasta made from durum wheat grown in poor soils can be higher in sodium.

Pasta has a Glycemic Index (GI) of 41 which is similar to pears and lower than many types of bread. The more al dente the pasta the lower the GI.
