Rotini Summer Salad
Bring to the boil 375g Rotini (plain or flavoured), and cook until al dente. Drain and cool.
Use fresh black olives
Semi Dried Tomatoes
Chargrilled Eggplants, Zucchinis and a few pepper dews
In a big bowl toss all the above and add ¼ cup virgin olive oil, rock or flake salts
Fresh Coriander and Mint mix well and serve.
